MDF of Poplar for trim

We are building a new house (super excited) and getting to pick out trim. I come from a trim carpenter background (about 12 years ago) and have never worked with or installed MDF.

I have a preconceived opinion that MDF is junk, but am told by many people it is "great" for painted trim.

We live where the weather goes from very cold to very humid throughout the year.

We are doing sheetrock window jambs, so NO trim around the windows. Just a handful of doors and base.

We have 2 young kids and I am afraid the kids will beat the woodwork to hell. The house will be far from "builder grade" but not a "mansion" either.

What are the opinions on doing MDF or painted Poplar for all the base and casing in the house?
