Why is “shawarma” in Toronto so bad?

I am legitimately baffled by what passes for shawarma here. It always tasted oddly “Indian” like, with fake garlic sauce, not real toum, and turmeric rice, vs. Authentic vermicelli rice. I’ve scoured the city and burbs to find a proper place, similar to Boustan or even dare I say Amir in Montreal, but it just doesn’t exist!! Anyone have recommendations?? And can any solve the mystery of the faux-warma they serve here!? Why is it like that?
