Impossible to install Windows10 on M.2 SSD

I'm trying (and so far miserably failing) to install Win10 on an M.2 SSD. My niece's laptop is in terrible condition due to it's embedded 32gb eMMC that doesn't allow any Windows updates because of lacking space which renders it basically unusable. After my brother in law tried to migrate the OS using some third party software, he ended up frying half the laptop and asked me to fix it.

From a technical stand point, I know how to do a clean install of an OS (at least I imagine I do), but for some reason, trying to install Win10 on THAT M.2 SSD that's connected to THIS laptop - I'm out of luck. At some point, when I was switching between the EFI-shell and the BIOS menu constantly, I thought I actually killed this laptop once and for all because I couldn't find a solution or a way out. I'm the first to admit that my technical know-how is probably not fully up to date, however that might be the reason I'm stuck, but installing an OS shouldn't be this hard. Please help!
